Sindhi Biryani
Sindhi Biryani is the most popular and special rice and meat dish from the Sindh province of Pakistan. Particularly famous in the cities of Karachi and Hyderabad, where the chicken version is more famous. Sindhi biryani is a very spicy and color full Biryani. Pakistani, Sindhi Biryani is very similar to Indian Bombay Biryani.
Ingredients
Basmati rice 1 kg
Chicken 1 kg
Large onions 3
Yogurt 200 gm
Large tomatoes 4
Garlic paste 2 tsp
Ginger paste 2 tsp
Green chillies 8
Fresh mint 1 cup
fresh coriander 1 cup
Red chili powder 2 tbsp
Black cumin 1 tsp
Black cardamon 6
Cloves 6
Cinnamon stick 2
Black pepper 10
Bay leaves 4
Green cardamons 6
Salt to taste
Oil 250 gm
Yellow food color 2 pinches
Method
Fry onion until golden brown.Remove all of the onions and place on absorbent paper.
Add chicken, ginger, garlic paste, tomatoes, yogurt, red chili powder and green chillies.
Add all spies Black cardamons, Black cumin, Stick cinnamon, Black pepper, Cloves, Salt, Green cardamons and 2 bay leaves.
Fry this until the tomatoes are tender and the water is dry.
Wash Basmati rice.
Boil the rice with salt and 2 bay leaves and drain the water of when the rice is half done.
Put layers of rice, Fried onion and chicken curry one by one with a last layer of rice on top add food color,fresh coriander and fresh mint.
Pot on a griddle and cook on high heat, When steam appears lower heat for 10 minutes.
Delicious Sindhi Biryani is ready to serve.
