Vegetable Biryani

Just like Mutton or Chicken Biryani, Vegetable Biryani is also an integral part of Pakistani Indian cuisine. Particularly in India where it is popular among vegetarians as well as non-veg.

Ingredients

  • 1/2 kg Basmati rice
  • 2 cup mix vegetables (Potato, carrot, cabbage, pee 1/2 cup)
  • 2 finely sliced onions
  • 1 tsp ginger, garlic paste
  • 1 tsp red chili powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp cumin
  • 1/2 tsp black pepper powder
  • 4 cloves
  • 2 bay leaves
  • 1/2 cup yogurt
  • 2 tomatoes
  • 1 tbsp fresh coriander
  • Salt to taste
  • 1/2 cup vegetable oil
  • 2 tbsp dry fruits (cashews nuts, raisin)

Method

Wash the rice well before cooking.

Cut all the vegetables into small thin pieces and fry each one separately in oil.

Heat a fry pan with oil, add onions and fry till light brown. Add tomatoes, yogurt, salt and all spices and then cook while stirring and mixing all vegetables.

Add bay leaves and salt in water and boil. Add the rice to this flavored water. Strain with 3/4th done.

Now mix in the rice and the vegetables mixture. Keep on low heat for 5-6 minutes.

Garnish with dry fruits and green fresh coriander leaves.

Serve the Vegetable Biryani hot with raita and pickle.
