Lamb Biryani

Prepared with Lamb meat, Lamb Biryani is an uncommon but very delicious Biryani recipe from India Pakistan.

Ingredients
1 kg Basmati Rice
1 kg boned leg of Lamb cut in to 6 cm
1 tsp ginger paste
1 tsp garlic paste
1 tbsp red chili powder
1/2 cup yogurt
1/2 tsp black tsp
10 cloves
5 bay leaves
2 sticks cinnamon
3 gm mace
2 onions
1/2 cup milk
salt to taste
1 cup oil
1/2 cup pure ghee (Desi ghee)
Saffron a few strands

Method

Wash and drain rice in water for one hour.

Soak saffron in the hot milk and set aside.

Heat oil in a large pot and fry onions until golden brown and soft. Remove with a slotted spoon and keep aside on a paper towel to dry the oil.

With the left over oil in the pot add all spices and ginger garlic paste and fry for at least two minutes on low heat.

After 2 minutes add lamb meat, yogurt, 2 liters water and cook, stir frequently until meat is soft and cooked and only a little gravy is left.

Add rice to the boiling water and cook until the rice is half cooked.

Spread 1/3rd of the rice in a layer at the base of the pot. Now layer with 1/2 of the meat.

Repeat the layering till the last layer is the rice.

Sprinkle the saffron milk on the top of the rice.Add fried onions and add pure ghee (Desi ghee).

Cover with a lid and leave on a very low flame for 30 minutes.

Now delicious Lamb biryani is ready to serve. Garnish it with salad and mint raitaa.
