Indian Egg Curry Recipe

In India, curry is a main popular dish in daily life and everyday meals. There are many kinds of curry like chicken curry, mutton curry, fish curry, vegetable curry, egg curry and much more but Egg curry is famous particularly among non-vegetarian curry lovers in India. Egg curry is a traditional recipe, It can be prepared and served on special occasions too. It is a spicy and delicious recipe. Indian egg curry is totally different than similar egg curry recipes from other origins the extra ingredient here is turmeric powder which totally changes Indian egg curry’s taste and color.

Ingredients

  • 6 eggs
  • 3 tomatoes
  • 1 small onion
  • 1/2 cup yogurt
  • 2 tsp red chili powder
  • 2 tsp coriander powder
  • 1 tsp turmeric powder
  • 1/2 tsp black pepper powder
  • 1/2 tsp ginger paste
  • 1/2 tsp garlic paste
  • 1/2 tsp cumin
  • 3 cloves
  • 3 cinnamon
  • 2 cardamon
  • 1 bay leaves
  • 1/3 gram masala powder
  • 4 green chilies
  • Salt to taste
  • 1/2 cup vegetable oil

Method

Boil eggs. Remove the shell of eggs and keep set aside. Make a paste of onion, tomatoes, and green chilies in a mixer or chopper.

Heat oil in a pot and add cumin, sauté in 2 minutes, Now add ginger paste, garlic paste and sauté again 2 minutes on a low heat. Add mixture of onion, tomatoes and green chilies and fry till golden brown.

Add red chili powder, coriander powder, turmeric powder, yogurt, black pepper powder, cloves, cardamon, cinnamon, bay leave and cook 10 minutes on a low flame. Cook till it starts leaving oil.

Add a half cup of water and cook it till curry dries. Now add garam masala and add 1 cup of water and bring to boil and reduce the flame.

Simmer for 8 minutes, Garnish by gram masala powder and place the boiled eggs on top of the curry just before serving it.

    This is an Amazing recipe. I tweaked it for what I had on hand and it turned out amazing. I love how you added the part about waiting untli the oil pools. This is so important in Indian cooking to get that curry you’d get at an Indian resteraunt. Thanks for sharing.

    @Kashif it was a mistake, I forgot to write that eggs will be placed on top of the curry just before serving them. Slice them up nicely and place them beautifully.

    I like yr receipe.We r preparing in same fashion except using yogurt.would you plse tell me adding yogurt change flavour.what is the importance of yogort.

    @Neetu: Yogurt is used to make the gravy, it adds a texture to the gravy which is not the same if you use tomatoes. Yes Yogurt ofcourse adds flavor to it which will be different if you used tomatoes.
