Dum Aloo Recipe

Potato (Aaloo or आलू) is very common and famous vegetable in India. There are many verities of Aloo (Potato) recipes. Potatoes can be mixed with any other vegetables there are many such recipes which are very commonly cooked in Indian Pakistani homes. Recipes like aloo gobi, aloo baingan, aloo matar, aloo curry, aloo methi and many more are around since centuries and are an essential part of the regional cuisine. Dum aloo is very popular recipe in India. Basically Dum Aloo recipe originated as part of Kashmiri cuisine. Dum Aloo is a traditional khasmiri recipe. It is very spicy and tasty recipe. It is very easy to make and low budget recipe. You can serve dum Aloo with chapati or rice.

Ingredients

  • 1 kg small baby potatoes
  • 4 tomatoes
  • 4 green chilies paste
  • 2 tsp red chili powder
  • 1 tsp turmeric powder
  • A pinch of Asafoetida
  • 1/2 cup yogurt
  • 1 tsp gram masala powder
  • 1/2 tsp black pepper powder
  • 1/2 tsp ginger paste
  • 1/2 tsp garlic paste
  • 1/2 cup onion paste
  • 1/2 tsp poppy seeds
  • 1/2 tsp cumin seeds
  • 1/2 cup milk
  • 1 tsp fresh chopped coriander leaves
  • 3 bay leaves
  • 1/3 coriander seeds
  • Salt to taste
  • 1 cup vegetable oil

Method

Peel and cut potatoes and wash them. Heat oil in a large pan, Add potatoes for frying. Fry for 5-8 minutes till potatoes golden brown in color. Drain potatoes and keep set aside.

In a same oil, add cumin seeds, coriander seeds, poppy seeds, bay leaves, ginger paste, garlic paste and saute for 2-3 minutes. Add red chili powder, turmeric powder, salt, chopped tomatoes, onion paste, yogurt, green chili paste, and black pepper powder. cook for 5 minutes on a low flame. Cook masala until oil start to separate .

Now add fried Aloo, asafoetida, gram masala powder, milk and 1/2 cup of water. Cook till gravy is dry and Aloo (potato) is completely soft.

Add chopped coriander leaves and cook (Dum) another 1-2 minutes on a very low flame and remove from heat.

Delicious Dum Aloo is ready to serve. Serve hot with chapati or rice.
